Peas are typical spring vegetables that love a cool spring and they can even tolerate a little frost. During the hot summer months, it is a difficult crop to grow without yield.

Like most bean species, this plant belongs to the legume family and is native to the Mediterranean region, Iran, Afghanistan and Tibet.

Peas have an aromatic sweet taste and a tough pod that is not edible. It is therefore necessary to remove the peas from the pod, also called 'pea pods'.

CULTIVATION TIPS:
Peas grow on all soil types. It is an easy crop to grow in average conditions. All extremes are best avoided (too wet, too cold, too hot, too dry, ...).

Use plenty of compost, but no nitrogen fertilizers when preparing the plot. Plant the peas in double rows (60 cm x 15 cm) in a sunny location. The ideal planting period is from mid-February to the end of April. For firmness, it is important to plant the young plants sufficiently deep, making sure the white stem portion is completely in the soil. As soon as the peas are 20 cm high, earth the plants. Push some soil along both sides of the plant so that they are a little firmer

There are different types of peas, these tendril plants grow between 60 cm and 120 cm high, so after planting provide enough support material of about 1 meter high (osier). For this you can use sticks, ropes, netting or willow branches. For a good harvest spread you can plant some plants early and some later.

HARVEST AND STORAGE:
Peas harvested too late are mealy. Young peas taste much sweeter because the sugars have not yet been converted to starch, so don't wait too long.

Harvest once or twice a week to encourage the growth of the young pods, this gives a richer harvest. Freezing is the best way to preserve peas (blanch first).

CULINARY:
There are many processing possibilities. Boil briefly and serve with carrots, incorporate into Indian curry dishes or a Moroccan tagine, but raw young peas in salads are also delicious.
