Allium ursinum may sound familiar to you as wild garlic. The plant is edible and has a delicious garlic aroma, which, by the way, you can smell even when you touch it. The leaves are perfect for making pesto, while you can serve the star-shaped flowers on a salad.
Wild garlic is regularly found in the wild, but don't confuse it with the poisonous lily of the valley! You can both give this bulbous plant a spot in your border as a ground cover or in your herb bin. Pollinators also love to flock to the flowers!
Wild garlic emerges above ground in early spring. The first leaves start to appear from March onwards. The plant flowers from April to May. This is the ideal time to harvest the leaves and flowers for use in the kitchen. From June onwards – after flowering – the leaves turn yellow and die back. The bulb then goes into dormancy underground and stores its energy in the root tuber. Don’t worry, though, because in spring it will pop up again and the leaves will reappear!
