Lemon balm is native to the Middle East, but has been native to the countries around the Mediterranean for centuries. It is a hardy perennial plant from the lipflower family. The plant has a square stem that branches and grows 50 to 80 cm high. The oval leaves are slightly hairy, have a serrated edge and give off a typical lemon scent. From June to September the plant blooms with white, sometimes light yellow, flowers. The flowers are very popular with bees and bumblebees, therefore lemon balm is sometimes planted around beehives

CULTIVATION TIPS:
Lemon balm is an easy plant to grow, with few requirements for soil type or location. Its preference, however, is for a moist spot, in full sun with afternoon shade. The plant has underground rhizomes which allow it to spread easily. Under favorable growing conditions, the plant can even proliferate. To avoid this, it is best to grow Lemon Balm in a pot or tub. In the winter the plant dies completely, but in spring it sprouts again from the rhizome.

CULINARY:
Lemon balm refines all dishes to which the lemon aroma fits. Always use the fresh - possibly chopped - leaves, do not let them cook along because they will lose their flavor. Lemon balm is delicious with fish or refreshing in salads. You can also add it to fruit salads, cool (fruit) drinks or as an accent for desserts with ice cream. You can also use the leaves to make tea or add to mixed vinegars.

MEDICINAL:
Lemon balm has a beneficial effect against all kinds of ailments. Because of the fresh lemon scent it is also used in aromatherapy. Adding some fresh leaves to the bath water has a relaxing and calming effect. It is also used as an aid against depression, insomnia and heart palpitations. A cup of fresh tea has a relaxing effect and benefits our sleep. Fresh leaves have a soothing effect on insect bites and sores.
