Dill (Anethum graveolens) is an ancient herb. It is native to the Middle East and Southern Europe. In the past, this culinary herb was primarily known for its medicinal properties among the Egyptians, Greeks, and Romans. Both the leaves and the seeds were used. Dill was likely spread throughout the rest of Europe by monks. During the Middle Ages, dill was used in the fight against witches. The herb has become indispensable in the kitchen.
In Scandinavian countries, dill is widely used in cooking, especially in fish dishes. The name “dill” comes from the Old Saxon word “Dilarm,” which loosely translated means “to lull to sleep.” Dill belongs to the umbellifer family, which also includes carrots, celery, and parsley. The plant has a hollow, glossy stem with feathery, delicate, threadlike leaves; its greenish-yellow umbel-shaped flowers are very popular with florists and add a sparkling touch to many floral arrangements. Dill can also be found growing wild in nature, where it naturalizes easily. Dill has medicinal properties that help relieve excess intestinal gas, acts as a cough suppressant, and is rich in vitamin C. Brewing the seeds as tea promotes a good night’s sleep. Dill prefers a sunny spot and grows best in moist, well-drained, and humus-rich soil. This plant can also be grown in pots or containers, provided there is sufficient water and nutrients available. It’s best to sow the seeds directly in the ground because dill is difficult to transplant due to its taproot system. The ideal time for this is April–May, and seeds should be spaced 30 cm apart. The seeds will germinate after two weeks. Thinning them to 20 cm apart produces sturdy, robust plants. Dill is not very susceptible to insects. It even helps protect against aphids.
