This cabbage variety is related to Paksoi and has purple stems with fresh green leaves. Harvest the stems early, when the flowers are still in bud, as this is when they are most delicious. The stems are tender and fleshy, perfect for stir-frying or incorporating into salads. Steam the stems briefly if you want to keep them for salads. Sow under glass from February to March and in the open ground from April to August.
