CULTIVATION TIPS:
Pimpernel is a perennial that stays green even in winter. It prefers a spot in the sun, but semi-shade is also tolerated. The plant does not like to stand with its feet in water. It is best planted in permeable, calcareous soil. The leaves are harvested from May to November. We use it fresh, dried it loses its aroma. We can freeze the herb.
USES:
The leaf of the pimpernel has a cucumber-like, slightly nutty, refreshing flavor.
It is important never to cook the herb, otherwise it loses its aroma. The chopped leaves flavor egg and fish dishes, soups and potatoes. The herb is one of the ingredients of the famous Frankfurter green sauce.
To vinaigrettes and mayonnaises pimpernel gives a refined, subtle flavor. We can also add some of the fresh herb to salads.
Pimpernel contains tannins, these provide a blood purifying and digestive effect. The herb can also be used for bladder and kidney infections, due to its diuretic effect.
