Rhubarb is delicious in jam or a freshly baked pie. Definitely a must to grow your own! The red-colored stems are edible, but leave the leaves for what they are. The stems can be harvested from April/May until June 21. From that date, the oxalic acid content in the stalks increases.

How to harvest
