CULTIVATION TIPS:
Cardoon is frost-sensitive and is grown as an annual in our area. The plant likes a spot in the sun in a well-loosened, nitrogen-rich soil
The plant attracts butterflies and bees to our garden.
The stems are bleached before use, by first removing the yellow and withered leaves and then wrapping the plant in black foil, straw, jute bags, etc. We raise the earth around the plant by about 20 to 30 cm, leaving the top open for the first few days to allow good ventilation. If the weather is wet, it is better to wait before tying it up. The harvest takes place 2 to 3 weeks later, depending on the weather conditions.
USES:
The taste of cardoon is between that of artichoke and asparagus. Most commonly used are the main veins of the blanched leaf stalks. If possible we use them fresh, once harvested the stems do not keep long, a few days at most. We remove the leaves from the stems and with a peeler we strip them of any thorns and the fibrous exterior, then we cut them into pieces and can blanch or boil them in water with a dash of vinegar. We serve them with a cheese or tomato sauce.
The flower buds are also edible.
Cardoon contains many vitamins, trace elements and fiber. The plant has an appetite stimulating and fat burning effect, it purifies the liver and bile and lowers cholesterol. It has a positive effect on gout, rheumatism and arthritis
