The Eryngii also called the King oyster mushroom has a velvety light gray-brown cap and a large firm white stalk. The mushroom grows in clusters and is very decorative and tasty.
Description: The cap is 5 to 12 cm wide with a rolled-in edge. The stalk is 6 to 10 cm long and 2 to 6 cm thick. The lamellae are sloping, white or yellowish. The spores are lilac in color.
Taste and application: The whole mushroom is very tasty and has a slightly spicy flavor. The King Oyster mushroom is excellent in sauces with meat or game, but also in vegetarian dishes, such as in an autumnal pasta dish with fried leeks and King Oyster mushroom.
