Chervil is native to western Asia. It belongs to the umbellifer family and is closely related to parsley, among others. It is a hardy, biennial herb but is usually grown as an annual. This herb can grow up to 70 cm high, has a hollow stem and very fine, compound, light green, pinnate leaves. In the 2nd year, the plant blooms with small, white umbels.

CULTIVATION TIPS:
Chervil likes a slightly shaded spot. In addition, provide a moist, well-drained and humus-rich soil.

Chervil withstands cold well and may therefore be planted outside early (from mid-March). Harvest when the herb is about 30 cm high, then you have tender young leaves and these taste the best. Cut off the leaves about 5 cm above the ground so that the plant can shoot back and you can harvest several times. Chervil can also be grown in pots, but make sure you use a good rich and airy potting soil. When chervil starts flowering it loses its aroma and is no longer usable. So you need new plants every time.

USES:
Chervil leaves have a light, anise-like flavor. Always use the tender, young leaves in your dishes, they are the tastiest.

In Belgium, chervil soup in particular is a well-known specialty. Chervil also goes perfectly with salads, sauces, cheese and egg dishes and certainly (grilled) fish dishes. Chervil is also an important component of a 'fines herbes' mixture. It complements the flavor of other herbs. Chervil leaf can be frozen just fine, retaining its flavor. Dried, it loses its aroma.

Chervil is rich in vitamin C. It promotes metabolism, is blood purifying and diuretic. It also has a beneficial effect on bronchitis and asthma. The fresh juice of chervil is a good remedy for sore throats, a tea made from the leaves is also soothing.
